Description

Responsible for the overall administration and operational matters in connection with the provision of food and beverage supplies and service within the Resort and to ensure the maximum possible revenue are attained to meet the forecasted and budgeted figures. Analyses operation costs and makes improvements in service procedures.

1. ENSURE ACHIEVEMENT OF DEPARTMENT’S SET PROFIT
OBJECTIVES
- operate the department within the budget.
- submit financial and operational reports with analysis and Monthly report
comment as required.
- develop and prepare forecasts for all operating revenue & expenses.

2. MAXIMIZE REVENUE
- design and implement marketing and sales programs in Promotion plans
coordination with sales personnel such as promoting special menu items, etc.
- develop new menus and prices.

3. MINIMIZE FOOD & BEVERAGE COSTS
- decide on the pricing of items.
- follow up and maintain food & beverage cost control methods Gross profit of food & beverage items & procedures.

4. ENSURE PROPER ADMINISTRATION OF THE DEPARTMENT
- administer internal systems and procedures. Adherence to policy
- ensure understanding and compliance with house rules
and internal regulations by staff.

5. ENSURE OPERATIONAL EFFICIENCY OF THE DEPARTMENT
- inspect & monitor the functioning of various outlets.
- Design and contribute knowledge to F & B area programs
- provide training and direction to key subordinates.
- resolve operational problems as required.
- ensure compliance with set policies, systems and procedures. Close compliance to policy
- evaluate staff performance.
- Oversee supply of support services such as maintenance and
installation of machinery, cleanliness of restaurant, staffing, etc.

Decision Making / Problem Solving:
- Handling guest complaints
- Staff disciplinary procedure
- Staff promotion
- Offer of complimentary F & B items
