- Able to run a section of the kitchen on his/her own while ensuring that it runs according to performance standards.
- Maintains a high level of food quality standards, whilst following Menus, Recipe formats, and directions as outlined.
- Following menus, recipe formats, and directions.
- Preparing and cooking food.
- Assisting in all activities in the kitchen.
- Enforce health and safety standards in the kitchen.
- Oversees preparation, cooking and presentation for plates.
- Provide direction to the kitchen helpers, including commis, cooks, kitchen attendants and stewards.
- Ensure that all dishes from that section are prepared consistently and accordingly to standard recipes.
- To ensure minimum kitchen wastage.
- To ensure knowledge of the product is maintained and communicated to all relevant personnel.
- To be responsible for completing mis en place.
- To learn and record skills and recipes from other members of the department.
- To monitor stock movement and be responsible for ordering on your section.
- To be flexible and willing to help the restaurant kitchen at busy times if required.
