  • Able to run a section of the kitchen on his/her own while ensuring that it runs according to performance standards.
  • Maintains a high level of food quality standards, whilst following Menus, Recipe formats, and directions as outlined.
  • Following menus, recipe formats, and directions.
  • Preparing and cooking food.
  • Assisting in all activities in the kitchen.
  • Enforce health and safety standards in the kitchen.
  • Oversees preparation, cooking and presentation for plates.
  • Provide direction to the kitchen helpers, including commis, cooks, kitchen attendants and stewards.
  • Ensure that all dishes from that section are prepared consistently and accordingly to standard recipes.
  • To ensure minimum kitchen wastage.
  • To ensure knowledge of the product is maintained and communicated to all relevant personnel.
  • To be responsible for completing mis en place.
  • To learn and record skills and recipes from other members of the department.
  • To monitor stock movement and be responsible for ordering on your section.
  • To be flexible and willing to help the restaurant kitchen at busy times if required.
