A Senior Pastry assist a Pastry Chef to runs a specific section or central kitchen, and report to the Pastry Chef / Assistant Pastry Chef. The role is made up of many varying responsibilities including:

  • Producing high quality output within in the section at central kitchen.
  • Assist the Pastry Chef in being responsible for the management of all pastry production to customer within the brand.
  • Controlling raw material and packaging material ordering.
  • Assisting with the management of health and safety.
  • Assisting with the management of food hygiene practices.
  • Managing and training any Junior Pastry in the section at central kitchen.
  • Monitoring production and waste control.
  • Overseeing the maintenance of kitchen and food safety standards.
  • Checking FSMS documentation.

To land a job as a Senior Pastry will need:

  • Certificate in Baking & Pastry
  • Food Handling Certificate
  • Valid Typhoid vaccination
  • Minimum 4 years relevant experience
  • Working knowledge of baking techniques and the pastry-making process
  • Awareness of manual handling techniques
  • Experience of kitchen equipment
  • Understandable level of English spoken and written
  • Malaysian Citizenship

Desirable and useful but not necessary qualifications include:

  • Food Safety Management System (FSMS)

Alongside some of these more general skills that all good Senior Pastry should possess:

  • Knowledge and ability to run a section at central kitchen.
  • Ability to work without close supervision
  • Ability to manage Junior Chefs
  • Ability to produce good quality products.
  • Good oral communication
