JOB SUMMARY

We are seeking a talented and experienced Senior Pastry Chef – Viennoiserie Specialist to join our culinary team. In this role, you will lead the production of our signature viennoiserie items, including croissants, pain au chocolat, danishes, brioche, and more. Your expertise in laminated doughs, baking techniques, and quality control will be essential in delivering consistently exceptional products. You will also mentor and guide a team of junior pastry chefs while continuously innovating and refining our offerings.

Key Responsibilities:

Viennoiserie Production:

  • Lead the creation of high-quality pastries, including croissants, pain au chocolat, pain au raisin, danishes, brioche, and seasonal specials.
  • Perfect the production of laminated doughs, ensuring they are flaky, flavorful, and consistently baked to golden perfection.

Quality Control & Consistency:

  • Maintain the highest standards for all viennoiserie, ensuring each batch meets both visual and taste expectations.
  • Troubleshoot and resolve any issues related to dough preparation, fermentation, or baking techniques to ensure top-tier quality.

Team Leadership & Mentorship:

  • Supervise, train, and inspire junior pastry chefs and kitchen staff in advanced viennoiserie techniques and best practices.
  • Foster a collaborative, efficient, and positive team dynamic.

Recipe Development & Innovation:

  • Work closely with the Executive Pastry Chef to develop new viennoiserie items, incorporating seasonal ingredients and innovative techniques.
  • Refine existing recipes and experiment with new flavor profiles to elevate the pastry menu.

Production Management & Organization:

  • Oversee production schedules to ensure timely delivery of pastries, especially during peak hours or special events.
  • Manage ingredient inventory, ensuring sufficient stock levels while minimizing waste.

Sanitation & Cleanliness:

  • Ensure strict adherence to health and safety standards, maintaining clean and organized workstations.
  • Supervise hygiene practices to meet food safety regulations and ensure safe food handling.

Experience/ skill/knowledge

  • Passion for baking and a desire to develop culinary knowledge and skills.
  • Previous experience in a viennoiserie environment is preferred but not required.
  • Advance understanding of food safety and sanitation practices.
  • Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
  • Minimum of 3-4 years of professional pastry experience, with 1-2 years in a senior role specifically focusing on viennoiserie production.

Job Types: Full-time, Permanent, Contract

Pay: RM2,400.00 - RM2,800.00 per month
