Position: Executive Chef

Location: Sambal Bakar Malaya Central Kitchen, Subang Bestari
Salary Range: RM2,500 ~ RM3,800 (based on experience)

Responsibilities:1. Recipe Development & R&D:

  • Create and innovate new recipes for Sambal Bakar Malaya, with a focus on sambals and dishes inspired by authentic Indonesian cuisine.
  • Conduct research and development (R&D) for traditional and modern Indonesian sambals to enhance menu variety.
  • Ensure recipes are scalable for mass production while maintaining quality and authenticity.

2. Purchasing & Supplier Management:

  • Coordinate and manage orders with suppliers to ensure timely delivery of raw materials.
  • Negotiate pricing and verify the quality of raw materials.

3. Inventory Control:

  • Monitor and maintain stock levels for raw materials such as chicken, fish, lamb, and sambal.
  • Implement FIFO (First In, First Out) and LIFO (Last In, First Out) methods to manage inventory efficiently.
  • Update inventory checklists and generate regular reports.

4. Order Distribution:

  • Ensure accurate packing and distribution of goods to outlets (Puncak Alam & Kampung Baru).
  • Prepare and verify delivery schedules to meet outlet needs.

5. Shift Scheduling:

  • Plan and manage staff work schedules to optimize operations and efficiency.
  • Ensure adequate manpower coverage for all shifts, including weekends.

6. Product Quality Management:

  • Oversee quality control for all prepared products to meet company standards.
  • Conduct regular inspections and audits to ensure consistency in taste and presentation.

7. Hygiene and Safety Compliance:

  • Enforce strict hygiene protocols in line with food safety regulations.
  • Conduct regular cleaning and sanitation of the kitchen area and equipment.
  • Ensure all staff adhere to hygiene and safety standards.

Requirements:

  • Minimum 1 year of experience in operations, food production, or related roles.
  • Proven experience in cooking authentic Indonesian cuisine, especially sambals.
  • Strong knowledge of R&D for recipes, particularly in Indonesian sambals.
  • Knowledge of inventory control systems (FIFO/LIFO) is an advantage.
  • Strong organizational and multitasking skills.
  • Ability to work flexible hours, including weekends and public holidays.
  • Proactive, detail-oriented, and committed to delivering high-quality results.
