Food & Beverage Manager Borneo Rainforest Lodge, Danum Valley Conservation Area, Sabah Job Summary The Food & Beverage Manager is responsible for overseeing all F&B operations at Borneo Rainforest Lodge, ensuring exceptional service, quality, and guest satisfaction. The ideal candidate has experience in high-end hospitality, strong leadership skills, and a passion for delivering outstanding dining experiences. Key Responsibilities 01. F&B Operations & Guest Experience - Oversee the daily operations of Merbau Restaurant, Hornbill’s Corner, and private catering services. - Ensure high service standards, excellent food presentation, and an exceptional guest experience. - Engage with guests to understand preferences, handle feedback, and enhance overall dining satisfaction. 02. Menu Planning & Quality Control - Work with the culinary team to develop seasonal menus featuring fresh, sustainable ingredients. - Maintain quality control, ensuring food and beverages meet high standards. - Introduce innovative F&B concepts and special dining experiences. 03. Cost & Inventory Management - Monitor inventory, procurement, and cost control to optimise resources. - Build strong relationships with suppliers to ensure consistent quality. - Implement strategies to minimise waste and control costs. 04. Team Leadership & Training - Lead and develop a high-performing F&B team, ensuring effective training and career growth. - Manage staff scheduling and performance, fostering a positive work environment. 05. Health, Safety & Compliance - Ensure strict adherence to food safety regulations and HACCP principles. - Uphold hygiene standards and safe handling of food and equipment. Qualifications 01. Proven experience as an F&B Manager or similar role in a luxury lodge, resort, or hotel. 02. Strong leadership and team management skills. 03. Strong understanding of food safety regulations and HACCP principles. 06. Excellent communication and guest service skills. 07.
