As a Commis I, you will work under the direction of senior kitchen staff, assisting in the preparation, cooking, and presentation of high-quality dishes.

This is a more advanced role for a Commis Chef, requiring greater independence and expertise in different cooking techniques. You will be responsible for ensuring the smooth operation of your station and maintaining the high standards set by the kitchen team.

THE JOBSCOPE

  • Prepare and cook food items according to the menu, ensuring consistency and quality in every dish.
  • Take responsibility for preparing and cooking more complex items or higher-volume orders as directed by senior chefs.
  • Assist with the preparation of mise en place for each station, ensuring all ingredients are ready for use during service.
  • Handle all food items with care, following recipes, portion control guidelines, and health and safety procedures.
  • Ensure that all dishes are prepared to the highest standards of flavor, appearance, and presentation.
  • Take charge of a specific station in the kitchen, such as grill, sauté, pastry, or cold prep.
  • Maintain a clean, organized, and efficient work area, adhering to health and hygiene standards.
  • Ensure your station is fully stocked and ready for service, assisting with inventory and ordering supplies as needed.
  • Work closely with the Demi Chefs, Sous Chefs, and Head Chef to ensure smooth communication and kitchen operations.
  • Assist in coordinating orders and managing service, ensuring all food is delivered promptly and to the correct specifications.
  • Follow all food safety regulations, including proper food handling, storage, and preparation procedures.
  • Maintain a clean and safe work environment by following sanitation protocols, ensuring all equipment is cleaned and sanitized regularly.
  • Be aware of and adhere to kitchen safety procedures, ensuring a safe environment for yourself and the team.
  • Assist with stock rotation and the proper storage of ingredients to minimize waste and ensure freshness.
  • Report any shortages or issues with ingredients to senior kitchen staff to ensure smooth service operations.

REQUIREMENTS

  • 2-3 years of experience working as a Commis Chef or in a similar role within a professional kitchen.
  • Proficiency in basic cooking techniques such as grilling, sautéing, roasting, and baking.
  • Knowledge of food preparation methods, knife skills, and kitchen equipment.
  • Strong organizational and time management skills to handle multiple tasks efficiently during service.
  • Ability to work well under pressure and in a fast-paced environment.
