Assists the Sous Chef in overall management of PastryProduction operations. Overall in charge of Pastry Production operations in the absence of Sous Chef. Ensures proper handling of all food products, including storage and preparation. Monitoring of overall food cost of entire Pastry. Monitoring of overall Good Manufacturing Practice (GMP) & Halal process in the Pastry. Assists in annual budgeting of manpower and capital expenditures (CAPEX) of the Pastry. Assists in annual Menu Creations, events & promotions. · Works out recipe cost with Finance – Cost Control, exercises portion control, monitors food cost, and minimizes waste. Attends to any assignment of work and tasks to all Chef de Partie and below. Oversee day-to-day operations of Pastry. Channelling of information, policies, and standards as and when established. Liaison with other departments on Pastry related matters. Monitoring and conducting training for all kitchen personnel. Reviewing staff performance appraisal. Ensures disciplinary and grievance procedures are properly adhered to and followed. Carries out any ad-hoc job-related assignments and / or tasks as delegated by immediate superiors. Strictly adheres to all Policies & Operation Procedures within the Company.
