RCG Cruise Line is seeking Commis Cooks, covering Central Kitchen, Restaurant, and Buffet Services. Work assignments and specific kitchen locations will be determined based on the ship's operational requirements during the onboarding process. Current openings are available in the following cuisine specializations:

  • Western Cuisine: Prepare classic and contemporary Western dishes, demonstrating proficiency in Western cooking techniques and flavor profiles.
  • Asian Cuisine: Focus on East and Southeast Asian cuisines. Create dishes with distinct flavors, ingredients, and cooking styles from the region.
  • Bakery: Specializes in bread-making, such as French baguettes and European whole - wheat breads. Master fermentation, baking temps, and timing for different breads.
  • Pastry: Specialize in crafting pastry items like egg tart crusts and puff pastry, mastering dough-folding, rolling, and filling techniques. Also, focus on creating delicate desserts such as puddings, mousses, and cakes, with a strong emphasis on presentation and flavor combinations.
  • Pantry Operations: Handle cold food preparation, including salads and garnishes, ensuring freshness and proper presentation.

Key Responsibilities

  • Collaborative Food Prep & Service: Work with Chef de Partie or Sous Chef. Prepare ingredients, set up workstations, and ensure smooth service.
  • Specialized Dish Making: Cook dishes per your specialization. Use suitable techniques for Western/Asian cuisines, and specialized methods for bakery, pastry, and desserts.
  • Recipe Adherence: Follow company recipes for consistent quality and presentation.
  • Cleanliness & Hygiene: Uphold high kitchen cleanliness. Comply with HACCP and onboard sanitation. Clean and sanitize regularly.
  • Safe Equipment Use: Operate kitchen equipment safely. Be proficient in specialized tools for bakery, pastry, and desserts. Check for malfunctions and report issues.

General Requirements

  • Education: A high school diploma or equivalent is preferred. Culinary training is an advantage.
  • Experience: Minimum 2 years of kitchen experience in quality dining establishments. Experience in cruise ships, hotels, or fine - dining restaurants is highly desirable.
  • Language: Basic English communication skills in speaking, reading, and writing.
  • Citizenship: Malaysian citizen.
  • Appearance: No visible tattoos.
  • Physical Ability: Capable of lifting and moving up to 50 pounds. Endure long-term standing and walking, and have good hand-eye coordination for kitchen tasks.

Skill Requirements

  • Knife Skills: Proficient in slicing, dicing, chopping, and julienning for non-bakery specializations. In the bakery, have skills related to dough cutting, shaping, and decorating.
  • Culinary Techniques: Skilled in basic and advanced cooking methods relevant to your specialization, such as traditional cooking techniques for Western and Asian cuisines, and various baking techniques for the bakery.
  • Food Safety: Knowledgeable about food safety standards and HACCP guidelines. Maintain a hygienic kitchen environment.
  • Equipment Operation: Able to identify and operate common kitchen equipment safely, such as grinders, fryers, ovens, and mixers. For a bakery, be able to operate specialized baking equipment effectively.
  • Ingredient Knowledge: Familiar with ingredients used in international classical dishes and understand their properties and applications relevant to your specialization. In the bakery, know the characteristics of different flours, leavening agents, and baking fats.
  • Menu & Presentation: Understand menus to estimate food requirements. Present food attractively and be able to explain dishes when necessary. In the bakery, focus on the visual appeal of baked goods and be able to describe their flavors and ingredients.
