Position Overview

As a Chef de Partie on our ships, you'll manage a kitchen workstation. Your main job is to prepare high-quality food for onboard dining outlets, providing guests with an excellent dining experience. It's a great opportunity for career growth in culinary management.

Key Responsibilities

1)Team & Operations

  • Lead your assigned kitchen section. Delegate tasks, support team members, and organize work schedules.
  • Collaborate closely with the Sous Chef to ensure consistent food quality. Oversee daily operations to guarantee a smooth and efficient workflow

2)Culinary Tasks

  • Possess in-depth knowledge of culinary terms and preparation methods.
  • Follow company recipes precisely to maintain taste and quality consistency. Work efficiently across different kitchen sections as required.

3)Special Requests & Cost Control

  • Promptly and proficiently handle special requests, such as show plates and tastings, as instructed by the supervisor.
  • Monitor production levels and suggest effective cost-control measures without compromising on food quality.

4)Inventory & Docs

  • Order food according to production needs and meticulously verify the accuracy of deliveries.
  • Keep recipes and kitchen documents well - organized and up - to - date.

5)Compliance & Hygiene

  • Strictly comply with public health standards and HACCP protocols.
  • Prepare work areas thoroughly for inspections and maintain the highest level of hygiene at all times.

Qualifications and Requirements

  • Experience: Must have a minimum of 8 years of experience in high-quality kitchens, with at least 2 years in a Chef de Partie or comparable role. A substantial part of these 8 years should be spent in kitchens offering diverse culinary options.
  • Skills: Strong leadership, communication, and problem-solving skills are essential. You should be able to multitask effectively and manage time efficiently to meet the demands of a busy kitchen. Additionally, a solid understanding of cost control and inventory management is required.
  • Language: Be proficient in English, both verbally and in writing, for seamless team management and communication with various departments.
  • Education: A high school diploma or equivalent is preferred. Culinary training is an advantage.
  • Citizenship: Malaysian citizen.
  • Appearance: No visible tattoos.
