REQUIREMENTS:

  • Minimum qualifications: Diploma/Certificate Hospitality/Cookery/Culinary Arts Health and safety and food hygiene certificates.
  • Minimum of 5 years’ experience working in a busy and successful kitchen in similar role.

RESPONSIBILITIES:

  • Ensure BOH operation carried out smoothly with improvement ideas from Brand Head Chef where necessary.
  • Ensure kitchen staff trained on menu and recipe adjustments/specifications to achieve food cost saving.
  • Possess sound knowledge on goods ordered from suppliers to ensure any spoilage or sub-standard items returned with procurement of paperwork to HQ.
  • Skillful in assessing order of food stock appropriate to sales volume on daily and weekly basis.
  • Monitor stock rotation in fridges, freezers and storerooms to ensure shelf-life of food and non-food maintained.
  • Conduct daily briefing and controlling stock inventory level to ensure no shortfalls especially on fast and slow moving food items.
  • Ensure compliance of standard operating procedures in the absence of Brand Head Chef or Head Chef; if any non-compliance found, it should be recorded.
