What you'll be doing
Restaurant Manager Job Scope
1) Daily Operations Management
- Oversee front-of-house (FOH) and back-of-house (BOH) operations.
- Ensure smooth service during both lunch (11 AM–2 PM) and night (6 PM–3 AM) shifts.
- Monitor opening and closing procedures, cleanliness, and safety standards.
- Handle reservations and customer flow, especially during showtimes.
2) Team Leadership & Staffing
- Recruit, train, and schedule FOH and kitchen staff.
- Monitor staff performance and maintain high standards of service and presentation.
- Conduct regular team meetings and SOP refresher.
- Motivate and maintain a positive work environment.
3) Customer Service & Experience
- Ensure exceptional customer service aligned with the brand’s Japanese hospitality.
- Handle guest feedback, complaints, and special requests effectively.
- Oversee customer journey from booking to dining and post-meal feedback.
4) Menu & Kitchen Coordination
- Work with chefs on menu development, updates, and plating standards.
- Coordinate food preparation timelines with live show schedules.
- Ensure consistency and quality of food and beverage output.
5) Financial & Inventory Oversight
- Monitor daily sales, COGS, wastage, and profitability.
- Manage budget planning and monthly performance reports.
- Oversee ordering, inventory levels, and cost control for ingredients and supplies.
6) Marketing & Promotion Support
- Work with marketing team for promotional events, influencer coordination, and online campaigns.
- Support execution of seasonal campaigns and ticketed events.
- Monitor online reviews and improve digital presence with the marketing team.
7) Show & Entertainment Coordination
- Coordinate timing between live performances and dining service.
- Communicate with performers and stage crew to align show schedules with kitchen pacing.
- Ensure lighting, sound, and ambiance transitions smoothly between dining and performances.
8) Technology & Systems
- Manage POS, reservation, and menu systems.
- Oversee website feedback, online bookings, and ticketing issues.
- Ensure proper use of tech by staff and resolve technical issues quickly.
9) Compliance & Safety
- Enforce hygiene, food safety, and workplace safety standards.
- Ensure compliance with local licensing, health, and alcohol service laws.
- Maintain proper documentation (SOPs, logs, checklists).
10) Reporting & Owner Liaison
- Provide regular operational, financial, and HR reports to the owner(s).
- Suggest improvements in workflow, cost efficiency, and customer experience.
- Act as the point of contact between ownership and daily staff operations.
What we're looking for
- Minimum 5 years of experience in operations or reservations management within the hospitality industry.
- Strong leadership, problem-solving, and team management skills.
- Excellent communication and interpersonal skills to engage with guests and staff.
- Proven ability to multitask and prioritize effectively in a fast-paced environment.
- Experience in inventory management and cost control.
- Proficient in restaurant management and reservation systems, as well as MS Office.
- A passion for the hospitality industry and Japanese cuisine.
- Flexibility to work evenings, weekends, and peak dining hours.
