Job Description

  • Supervising and overseeing the pastry and baking kitchen, while collaborating with the CDP and Demi Chef to guarantee a successful work environment.
  • Menu development, design or creates new ideas and items for pastry kitchen.
  • Ensure that product preparation is handled and stored in accordance with the company and safety standards.
  • Ensure and maintains the efficiency of employees, guides and motivates the production team to work efficiently.
  • Supervise production team in preparation shift operation.
  • Creating a quality, beautiful and tasteful presentation thru decorative pastries and desserts.
  • Meeting with Management team to discuss details and planning of custom-made breads & pastry.
  • Nurture talents chef and help in recruitment.
  • Keeping track of the stock of baking ingredients and equipment to ensure an efficient and smooth production process.
  • Purchasing new supplies, ingredients, and equipment when required and manage within the provided budget.
  • Ensuring kitchen adheres to safety and health regulations.
  • Review and constantly improving the training manuals & sop.
  • Train the team on skills and ways of proper operating of machines, equipment, and tools.
  • Actively participate in quality initiatives, such as daily chef briefings and monthly team meetings, to ensure that the production process is constantly improved, production targets are met, and communication is maintained.
  • Ensure that accuracy of stock as per FIFO, and HACCP aspects are maintained during the production process.
  • Communicating with the Operation and Procurement PIC weekly about the ongoing planning and end of day production activity.
  • Provide accurate monthly operation reports to the management team in relation to total quantity of products produce, wastage reports and manpower update.
  • Achieved zero shortage of products to meet daily delivery target.

Job Requirements:

  • Certificate or diploma in pastry making, baking or relevant field.
  • 7 years and above experiences working within the food industry.
  • Working knowledge of baking technique and pastry making.
  • Creative ability with artistic skill in breads & pastry.
  • Capable of working in fast-paced, production environment.
