JOB DESCRIPTIONS

1.0 Basic Function

Responsible for supervising and co-ordinating the activities of pastry staff in the preparation of pastries, desserts, cakes, pies, cookies rolls and all types of bread and doughs.

2.0 Responsibility and Authority

2.1 Supervise and co-ordinate these activities:

- Preparation of all doughs.

- Moulding and baking of bread rolls, cakes, pastries, pies, desserts and other kinds of bread.

- Decorating and apportioning of desserts in serving dishes.

2.2 Check daily menus and Function Event Orders to determine kind and quantity of pastries and desserts to be prepared. Initiate requisitions based on planned desserts and functions.

2.3 Plan production in order to have bread, cakes, pastries etc freshly baked when needed and in quantities specified.

2.4 Ensure that all kitchen outlets are supplied with their requirements for desserts, pastries etc.

2.5 Prepare all intricate desserts such as souffles, bombes, petits fours and pralines when necessary.

2.6 Supply the Cost Control office with recipe contents specifying quantity of ingredients of all desserts, pies, cakes, petit fours etc.

2.7 Study preparation of new desserts, pastries and etc.

2.8 Prepare duty roster schedules of his staff weekly.

2.9 Train and evaluate performance of his staff.

2.10 Ensure that kitchen equipment and utensils are handled and used properly and check the cleanliness and maintenance of work areas.

2.11 Ensures that the Hotel’s cost control policies and procedures are followed.

2.12 Be fully familiar with all emergency procedures, policies and standard operating procedures established by the Hotel.

2.13 Enforce the house rules and regulations of the department and the Hotel.

2.14 Perform other duties as directed.

Job Types: Full-time, Permanent

Pay: RM2,500.00 - RM3,000.00 per month
