Position Summary
Leads the entire product development process in the food industry, combining culinary creativity with market insights and business strategy. Key responsibilities include creating innovative products, managing cross-functional teams, analysing trends, ensuring profitability, and aligning products with customer needs and company goals. The position also focuses on maintaining quality, compliance, and collaboration while driving market success.
Key Accountability
- Menu Development and Innovation
- Designed and operationalized a new catering facility to transition MCAT operations, ensuring a smooth shift to the new business and location.
- Collaborated with culinary teams to research global food trends and create innovative, culturally relevant, and dietary-specific meal options.
- Combined creativity with exceptional kitchen capabilities to develop profitable, customer-focused, and market-driven meal products.
Product Development and Trend Leadership- Led the end-to-end product development lifecycle, from concept to market launch, by gathering product briefs and aligning them with business objectives.
- Researched and implemented food trends, consumer preferences, and innovative culinary practices to create diverse, high-impact product portfolios.
Strategic Collaboration and Execution- Partnered with senior leadership to design product strategies aligned with brand image, service goals, and customer feedback.
- Worked with operations and procurement teams to ensure innovations were executable within budget and supply constraints.
Cost Efficiency and Sustainability- Developed cost-effective meal plans using ingredient substitutions and alternative preparation methods without compromising quality.
- Advocated for sustainability initiatives to reduce food waste and carbon footprint, supporting airline and industry goals.
Quality Assurance and Compliance- Ensured adherence to aviation regulations, food safety standards, and nutritional guidelines, including compliance with CAAM, JAKIM, MAVCOM, and KKM.

Qualification & Working Experience
- Bachelor's Degree Culinary Arts, Food Science, Nutrition, Business Administration, Marketing, or a related discipline.
- 13-15 years of experience in product development, culinary innovation, or a related field with at least 5-7 years in a managerial capacity.
- Experience in Airline catering
- Hands-on experience with new product development processes, market research, and culinary innovation
