Description

• Reports directly to the Chief Steward.
• Responsible for his safety and that of others.
• Plans and prepares national dishes for Lunch and dinner in accordance with the cycle menus.
• Ensures adherence to the cycle menu’s and makes changes as and when required together with the Chief Steward and the approval of the OIM.
• Ensures the Healthy Eating Principles are being followed during the preparation of the same.
• Maintaining of housekeeping, Kitchen Equipment and food storage area and assists in the daily cleaning of the galley and the weekly detaining of the same in accordance with the Rig Cleaning Schedule.
• Adheres to the Rig Cleaning Schedule when assisting the galley boy with the cleaning the galley and ensures the galley boy cleans the dining room as per the same schedule.
• Ensures that all Personal and expected Hygiene regulations are strictly adhered to by all cooks servers and helpers at all times whilst working in the galley. This includes the proper handling, preparation, cooking, and storage of all foods including defrosting.
• Ensures all Safety regulations are being adhered to by everyone working in the galley. This includes the proper and mandatory use of PPE when handling, preparing, cooking and serving of foods.
• Ensures that Baine Marie temperatures are correct. (140dg F> 60dg C.)
• Ensures all foods are properly wrapped and correctly stored when placed in the Freezer, Chiller and Dry store.
• Is responsible for recording any foods or supplies removed from the Dry store, Freezer or Chiller to be passed to the Chief Steward for Costing and Consumption purposes.
• Advises the Chief Steward if certain items are running low that need to be ordered.
• Assist the Chief Steward to do fortnightly stocktakes if requested.
• Be prepared to teach and share your cooking knowledge with those willing to learn national cooking. This is for their benefit and that of Bayong as well.
• He should have a knowledge of a variety local Kueh that he can prepare for smoke times.
• Provide back up support for the Chief Steward by way of maintaining discipline in the galley, and ensuring all are following the the HSE guidelines as required under the terms of the contract.
• Ensure that instructions on minimizing fires are followed when it comes to cleaning the exhaust hoods including in and around the stove, ovens and deep fryer areas.
• Other duties as required by the Chief Steward.

In addition to that, and with the backup and support of our clients, other development programs like OJT (On the Job Training) have been established a a means, for those with the interest and the potential, to enhance their progress to higher and more skillful positions on the deck to the benefit of themselves, and that of the Company and the Client.

As a result, Bayongs Mission and Primary Goal, is to not only become the preferred choice in the provision Offshore Manpower by supplying the Right Man for the job, but also to take the lead in its provision of Catering and Janitorial Services in South East Asia.
