Job description We are looking to hire a highly skilled Specialized Japanese Sous Chef to prepare Japanese dishes in accordance with food health and safety regulations and restaurant standards. The Japanese Sous Chef’s responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and placing orders for supplies as needed. You should also be able to customize customers’ orders according to preferences and food allergy considerations. The Specialized Japanese Sous Chef should ensure that all ingredients used in dishes are of the highest quality. Ultimately, an exceptional Specialized Japanese Sous Chef should work well under pressure and maintain restaurant standards during busy periods. The goal of the Sushi Chef position includes preparing traditional Japanese cuisines, expertly cutting, slicing, and filleting various kinds of fish, and placing orders for supplies as needed. Specialized Japanese Sous Chef Responsibilities: • Expertly cutting, slicing, and filleting different types of fish. • Inspecting the quality of fruits, vegetables, meat, and seafood used to prepare Japanese cuisine and informing the Executive Chef when the quality is sub-standard. • Preparing various types of Japanese cuisine according to established guidelines on quality, portion size, presentation, and food safety. • Serving the perfect Japanese cuisine presentation with special techniques, ensuring each plate is a visual and culinary delight. • Maintain the cleanliness and organization of the kitchen section, including proper storage of ingredients. • Assist with the preparation of sushi and sashimi, ensuring the use of fresh, high-quality seafood and ingredients. • Support senior chefs in handling the delicate art of sushi rolling, cutting, and presentation. • Maintain a high standard of cleanliness and precision at the sushi station, ensuring that all tools and workspaces are in top condition. • Assist in preparing rice and maintaining consistency in sushi dishes with Omakase Sushi concept. Sushi Chef Requirements: • Fluent in spoken and written in Japanese. • Completed High School. • Proven experience working in upscale Japanese restaurants. • Sound knowledge of food safety regulations. • The ability to work under pressure. • The ability to stand for long periods of time. • Excellent time-management skills. • Exceptional customer service skills.
