R & D CHEF/MANAGER

(based Petaling Jaya, Selangor)

Responsibilities

  • Lead and motivate R&D team members and production staffs to increase morale and achieve higher efficiency.
  • Involved in exchange of ideas and contribute expertise throughout the R&D process.
  • Accountable to provide innovative, creative and unique recipes to launch in the market
  • Responsible to plan, lead and execute efforts in research work and new product development projects as assigned and ensure completion according to deadline.
  • Accountable to develop and execute proper research and methodologies into establishing new product recipes.
  • Responsible to plan, execute and monitor approved product and process development for launching according to deadline.
  • Responsible to develop standard processes and procedures (SOP) for new and current products.
  • Responsible to monitor quality and sensory evaluation and feedback to management on the results.
  • Liable to establish costing information for new and revised formulation.
  • Accountable to prepare, evaluate and record all new products, improvements or cost savings activities reports.
  • Responsible to ensure safe and updated R&D documentation and recipe file at all times.
  • Responsible to plan, maintain and record personal working schedules and update to superior on any changes made for verification and payroll purposes.
  • Responsible to present and explain the R&D activities progress to management.
  • Maintain state of the art expertise in food R&D in terms of innovation, creativity and uniqueness.
  • Accountable to provide technical solution and troubleshooting during R&D production process.
  • Responsible to ensure compliance of R&D activities according to company Standard Operating Procedure (SOP), food safety standards and halal standards.
  • Responsible to monitor, evaluate and ensure quality of new and current samples and ingredients used according to company Standard Operating Procedure (SOP), food safety standards and halal standards.
  • Responsible to monitor, evaluate and ensure quality, appearance and the good taste of products produced.
  • Accountable to guide team members and revise process (with approval) to maintain quality, appearance and the good taste of products produced.
  • Responsible to establish syllabus and conduct training of R&D team members throughout the process of product launching.
  • Liable to maintain high level cleanliness of the working and storage area as well as equipment.
  • Assist in ad-hoc assignment as required by management.
  • To perform any other duties as may be assigned from time to time

Requirements

  • Mastery in pastry, cakes, and confectionery, preferably, candidates have formal certificate in baking, culinary or food studies.
  • 4-6 years of relevant experience in recipe creation, mass production, and food safety.
  • Leadership experience is a must, with a proven ability to manage and lead a team.
  • Expertise in Laminated Pastry and Patisserie Production
  • Familiar in Research & Development of new recipe, mass production, central kitchen, Halal and other food safety compliances
  • Familiar and able to handle R&D kitchen equipment
  • Able to provide support and assistance to subordinates, management and superiors.
  • Able to work effectively and efficiently in stressed fast paced environment
  • Good communication skills (verbal and written)
  • 6 working days per week and willing to work in Petaling Jaya.

Salary RM7,000– RM10,000 to commensurate with experience. The position reports to the Head of Department (R&D)
