Chef de Partie (CDP)
Job Summary:
The Chef de Partie (CDP) in a healthcare kitchen plays a key role in ensuring the efficient preparation and delivery of nutritious, high-quality meals tailored to the needs of patients, staff, and visitors. This position is responsible for overseeing a specific section of the kitchen, managing food preparation and cooking, ensuring compliance with food safety regulations, and maintaining a clean, organized kitchen environment. The role requires an understanding of dietary restrictions and preferences, with an emphasis on maintaining hygiene standards and following healthcare dietary guidelines.
Key Responsibilities:
- Food Preparation and Cooking:
- Prepare and cook meals for patients, staff, and visitors in line with menu plans, dietary guidelines, and food safety standards.
- Ensure meals meet nutritional, dietary, and allergy specifications (e.g., low-salt, gluten-free, diabetic, vegetarian).
- Manage and oversee your section of the kitchen, whether it’s hot kitchen, cold kitchen, or pastry section.
- Assist with menu planning, food ordering, and portion control to meet the needs of the healthcare facility.
- Dietary Knowledge:
- Understand and adhere to specific dietary requirements related to patient health needs (e.g., low-sodium diets, pureed foods, texture-modified meals).
- Communicate effectively with dietitians, nutritionists, and medical staff to ensure all patient dietary needs are met.
- Food Safety and Hygiene:
- Maintain a high standard of cleanliness and hygiene in the kitchen, in compliance with healthcare food safety regulations (e.g., HACCP, food temperature guidelines).
- Ensure proper storage and handling of food items to minimize waste and contamination.
- Regularly monitor kitchen and food storage areas for cleanliness and safe practices.
- Supervising and Training:
- Assist in the training and development of junior kitchen staff and kitchen assistants.
- Ensure that all staff members follow safe working practices and adhere to kitchen hygiene protocols.
- Quality Control:
- Ensure that all food served meets the established quality standards for taste, presentation, and nutritional content.
- Regularly review and taste food to ensure consistency and quality.
- Inventory and Stock Management:
- Assist in managing stock and inventory, ensuring all ingredients are readily available for meal prep.
- Maintain effective stock rotation practices to minimize waste.
- Compliance:
- Ensure all kitchen operations comply with local food safety regulations and healthcare policies.
- Ensure compliance with patient confidentiality and any relevant data protection laws regarding dietary needs.
Qualifications & Skills:
- Experience:
- Proven experience as a Chef de Partie or similar role in a healthcare, hospital, or large-scale catering environment is preferred.
- Experience with dietary requirements and cooking for specific health conditions is highly desirable.
- Skills:
- Strong knowledge of food safety and hygiene standards.
- Ability to prepare and cook a variety of food to meet dietary and nutritional requirements.
- Good organizational and multitasking abilities, with attention to detail.
- Ability to work in a team and communicate effectively with other kitchen and medical staff.
- Flexibility and adaptability in a dynamic and sometimes high-pressure environment.

Working Conditions:
- Full-time or part-time, with potential for shift work, including weekends and holidays.
- The role may involve standing for long periods, lifting and carrying food items, and working in a fast-paced kitchen environment.
- Adherence to uniform and personal hygiene standards is mandatory.
Job Type: Full-time
Pay: RM3,000.00 - RM3,500.00 per month
